- 1 1/2 pounds boneless, skinless chicken breasts
- 3 (1-oz.) mozzarella string cheese sticks, each cut into 4 pieces
- 1 ounce blue cheese, crumbled (about 1/4 cup)
- 1 1/4 cups (about 5 3/8 oz.) all-purpose flour
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 3/4 teaspoon paprika
- 3/4 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- 1 cup whole milk
- 1 large egg
- 3/4 cup buffalo-style hot sauce (such as Frank’s Red Hot), divided
