Cheesy Rice Balls: For perfectly fried, mozzarella Arancini, dip a rice ball into flour and shake off any excess. Dip floured ball into egg, allowing any excess to drip off. Finish by coating completely in breadcrumbs. Repeat.

- 1 cup chicken broth
- 1 teaspoon salt, plus more for sprinkling
- 1/2 cup finely shredded Parmesan cheese

- 2 large eggs
- 3/4 cup flour
- 1/2 teaspoon black pepper
- 1 cup panko (Japanese-style bread crumbs)
- Canola or peanut oil for frying
- 1 lemon, cut into wedges
