Giant Ribeyes With Blue Cheese Butter
An incredible steak dinner made on a single pan, in under 30 minutes? No, we’re not kidding. This mouthwateringly impressive meal couldn’t be easier to pull off, but is most definitely appropriate for a special occasion. But then, what isn’t when it’s topped with blue cheese butter? If you’re not a huge blue fan, you could easily use feta cheese instead.

- 1 1/2 lb. fresh green beans, trimmed
- 2 cups multi-colored grape tomatoes
- 2 Tbsp. olive oil
- 1 1/2 tsp. kosher salt
- 1 tsp. black pepper
- 2 (12 to 16-oz.) boneless rib-eye steaks (about 1 1/4-in. thick)
- 3 Tbsp. unsalted butter, softened
- 1 1/2 Tbsp. crumbled blue cheese
- 1/2 tsp. chopped fresh thyme
