Apple Oat Energy Bites: Back-to-school has got nothing on these tasty, filling snacks. If you don’t have almond butter (or have a picky eater in the house), feel free to swap out for peanut butter or your nut butter of choice.

Ingredients
- 2 1/2 cups rolled oats
- 1 cup grated Granny Smith apple, loosely packed (about 1 large apple)
- 1/2 cup almond butter
- 1/2 cup unsweetened shredded coconut, plus more to coat (optional)
- 1/4 cup honey
- 1 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- Chia seeds, to coat (optional)
