Migas Tacos
These are so tasty, we can’t decide if they’re best for breakfast, lunch, or dinner. Whether you’ve got a hungry crowd and you’re on a tight budget, you’ve got a serious craving for tacos, or you’re struggling after a long night out (it happens), these are about to become your go-to. We used Valentina hot sauce, but any hot sauce will do.

Ingredients
- 3 bacon slices, chopped
- 2 ounces diced dry-cured chorizo
- 1 cup broken tortilla chips
- 1/3 cup diced orange bell pepper
- 1 to 2 serrano chiles, seeded and diced
- 1/2 cup fresh pico de gallo, drained well
- 3 large eggs, beaten
- 2 ounces Monterey Jack cheese, shredded (about 1/2 cup)
- 4 corn and wheat blend tortillas (such as La Tortilla Factory), grilled or lightly toasted
- Hot Sauce
- Chopped fresh cilantro
- Avocado slices
