A delicious and simple lower fat vegan twice baked potato recipe using sweet potato to create a cheeze topping. Packed with 8 grams of fiber per serving and only 4 grams of fat.
These potatoes hold up well in the fridge and taste just as good reheated in the microwave for 1 minute. A great thing to make in advance and eat for several meals for a couple of days.
- 4 Russet Potatoes
- 1/4 Cup MVC Sour Cream Recipe
- 1/2 Teaspoon Lemon Pepper
